Labor Day is best observed in backyards with fists full of juicy burgers. To honor it, and leisure, Eatsy is going hyper seasonal with an easy veggie burger recipe.
For the DIY’er, the dignified vegetarian, and anyone else interested in a decent (read: not freezer-burned or tough) veggie burger, I entered uncharted territory. Having never made a meat-free burger before, there were rules. The result had to be easy and it had to be fool-proof. Happily, the burger is also satisfying and really tasty; it wouldn’t be worth sharing otherwise.
Here are some first-timer notes you may find helpful.
1) Veggie burgers are adaptable. Substitute rice, couscous or any grain for the bulgur; lentils, pintos or other legumes for the garbanzos. Omit zucchini, add grated carrots, more herbs, less herbs, no nuts, other nuts. Some mustard maybe? A dash of soy? Up to you.
2) The recipe below is for a pan sear, because our grill was on loan. But this recipe works equally well when grilled over medium heat.
3) All chopping, except for the onions, can be done in the food processor, by pulsing quickly and often until chopped according to the specifications.
4) As for the bulgur, I cooked mine in plenty of salted water until tender but toothsome, about 8-10 minutes. Then strained and tossed to dry.
5) Leftovers keep wrapped in the fridge for days. They freeze well, too.

Ingredients:
1 plump clove of garlic, smashed and peeled
1 1/2 cup garbanzo beans, cooked
1 tablespoon olive oil
1/2 cup, cilantro and/or parsley leaves, plus their stems
1/2 medium red onion, chopped fine
1/4 cup sunflower seeds, roughly chopped
1/4 cup zucchini, chopped fine
1 1/2 cups bulgur, cooked
2 eggs
1/2 cup bread crumbs
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
Dash of Tabasco sauce
Juice of 1/2 lemon
Salt and pepper
Instructions:
Place the garbanzo beans, garlic and olive oil in a food processor fitted with a blade attachment. Puree until uniform and completely smooth.
Transfer the garbanzo bean puree to a large mixing bowl and add the remaining ingredients. Mix well to thoroughly combine.
With clean hands, form six patties out of the mixture and set them aside to rest for at least 10 minutes. Don’t make them patties too thick or they’ll be hard to flip and will crack.

Add a good amount of olive oil to a large skillet, enough to amply cover the base, and set it over medium-high heat. Once hot, lay the patties into the pan. Lower the heat to medium and cook until golden brown, about 3-4 minutes. Flip and sear the other side, until golden brown, an additional 3-4 minutes. If adding cheese, after flipping, lay thinly sliced cheese over top of the seared half. Then cover the pan with a lid. Once the cheese melts, remove the lid and cook an additional minute.
Serve veggie burgers on a platter with grilled bread, foccacia or buns and a choice of the following fixins’: mayo, ketchup, sliced tomato, mustard, avocado, sliced onion, greens.

Love a good vege burger! I've been a vegetarian for 25 years & have made *a lot* of vege burgers. I find it's best to sauté the onion & garlic rather than mix it in raw - especially if using spices such as cumin as they should most definitely be fried off in a pan first to develop the flavour. One common problem with vege burgers is they're often too moist or not robust enough to throw on the grill. I dislike adding breadcrumbs as it's introducing a whole range of other ingredients & additives into the burger, so I use either toasted rice crumbs or very fine bulghur wheat (that you mix in dry). I like experimenting with grains & love toasted buckwheat & millet too. Also nice to coat the burgers in rice crumbs - they go super crunchy! One of my favourites is carrot & cashew burgers with fresh thyme in them - & I also love mushroom, walnut & lentil burgers that I also add brown rice to.

Yum, I bet you could make a version using quinoa as well. To make a vegan version of this recipe use flax "eggs" 1/4 cup (60 ml) flax seeds 3/4 cup + 2 tbsp. water (210 ml) Place flax seeds in a bowl of food processor and grind thoroughly. With the motor running, slowly add water. Let the processor run for about 5 minutes. Measure and use a required. Mix can be stored in fridge for 5 days. This is from "Rebar", a great cookbook from the resto of the same name in Victoria, British Columbia.

Kitty, thank you for this recipe, I have to try this!! Although I eat some chicken and fish I prefer vegetarian food. I cook 3 meals a day and most of those use vegetables. Like magicjelly said, veggie burgers have a problem with 'drying' out. Instead of dry breadcrumbs, I like to add a slice or two of bread moistened with 1 teaspoon of milk. Or place the breadcrumbs on a plate and pat some on the burger after the patties are formed. In this way you get a gorgeous crust, without the inside drying out much. One other tip, true vegetarians don't eat egg. If you want to leave out the egg, but still get the binding factor, just use 1tsp of cornflour per egg. Or pat some dry cornflour on the formed patties.

My kids have been eating veggie burgers since they were teeny wee ones and they all still love them. We freeze them and they pop them into the microwave for a snack. I like to put interesting toppings on them - yogurt and cucumber - raita and the like - sometimes creamed horseradish! I agree that grilling is difficult - sometimes wiping the grill with oil and then putting the lid on helps - Gotta go slowly!

There's nothing like a good veggie burger- except a good tofu burger, and I can't have those (can't have soy). The best thing about veggie burgers is even my meat-loving friends clap with glee when I announce I'm making them. You can add anything to them, even bits of free-range bacon when there are no vegetarians around. I'd like to add that applesauce is a good replacer for egg, but my own veggie burger recipe is actually vegan and doesn't have eggs at all. Mine are more like small, very thick pancakes. No chance of falling apart!

I love veggie burgers and have lots of recipes. I´m definately going to try this, so full of goodness!

Since i am vegetarian i was very excited when you posted this. I tried it today and it was so good. They fell apart since it was my first time ever making my own vegetarian burgers (plus i added corn) but i put them back together after i cooked them. They were so good.

Made the veggie burgers tonight and they were fantastic! Only thing I should have done was taste the mixture to see if it needed more salt/seasonings BEFORE adding the eggs. Next time I know. Looking forward to making these again.
