If you live in New York, you’ve probably seen Van Leeuwen’s soft yellow trucks parked on corners, causing some degree of fuss. And if you don’t know firsthand, let me tell you, the ice cream chilling inside deserves attention.
We spoke with Ben Van Leeuwen, the man at the center of the operation that now includes a small storefront in Greenpoint, Brooklyn and distribution to select fancy food stores nationwide. His ingredient-driven approach is awfully hard to find fault with, especially after you taste the result.
What is “artisan” ice cream and what makes yours distinctive?
True artisan ice cream is made in the same way it was before the industrial revolution. That means nothing is added to the base other than cream, milk, cane sugar and egg yolks. The finished product is high in butterfat and imparts a rich mouth feel.
Our ice cream is significantly less sweet than most. The reason for this is simple: taste! Less sugar allows other flavors to shine through. Since high quality, primary ingredients are at the heart of our practice, we source from all over the world and use French chocolate (from Michel Cluizel), Ceylon cinnamon, heritage palm sugar from Bali, and Sicilian pistachios. Small steps are taken throughout the process to maximize flavor wherever possible. We crush cinnamon quills by hand before infusing them in milk and use vanilla that’s aged for three months in vodka-filled oak barrels. These extra considerations make a big difference in the end.
What is your process for sourcing?
We spend a very long time finding the right ingredients. Finding our vanilla extractor took us over six months and sent us (virtually) to a farm in Papua New Guinea, then to an importer in Colorado and finally to a pastry chef in Canada. For most things, however, we go local. Our milk, for instance, comes from Lewis County farms in upstate New York.

In general, what should we look for in a pint of ice cream?
When buying ice cream, avoid those with stabilizers like corn syrup, whey, carrageenan, locust bean gum, guar gum or milk powder. High butterfat on the nutritional panel is a sign of quality, believe it or not. Look for ice creams that have at least 16g of fat per serving. Ours is 21% butterfat.
How should people go about making ice cream at home?
Before I started making ice cream on a large scale, I studied professional methods and read about the science of ice cream making on a molecular level. At home, however, I’d recommend that you simply start with great ingredients and that you make sure your custard sits overnight in the refrigerator so it has enough time to set.
How do you develop new ice cream flavors?
We make simple, single flavored ice creams that celebrate ingredients. As exciting products become available, we add new flavors. Most times we create new combinations based on something that my partners Laura, Pete or I dream up.
Why ice cream trucks?
Trucks are a low overhead “store front” and the saved rent money goes back into our product. Plus, scoop trucks are nostalgic relics… who doesn’t like them?
You’ve tried a lot of web marketing. What has it done for your business?
Social media connects us with our customers. We use it to share news, flavor ideas, daily pastry offerings and to generally keep our followers up to date on Van Leeuwen happenings. Truth be told, we never expected so many people to follow the trucks online. Who’d have thought? Anyway, it’s incredibly exciting.

Bittersweet Chocolate Ice Cream
by Ben Van Leeuwen
Serves 6
2 cups heavy cream
2 1/3 cups whole milk
1 1/4 cup sugar
6 egg yolks
6.5 oz. Michel Cluizel or other chocolate with 99% cacao
Ice cream maker
Set up an ice bath.
Set a double boiler over medium-high heat and bring the milk to a simmer. Add 3/4 cups of sugar and stir until the sugar dissolves. Then stir in the cream and continue cooking for another 10 minutes.
While the milk mixture is simmering, whisk the yolks and remaining sugar together in a medium-sized bowl.
After the 10 minutes has elapsed, gradually pour some of the milk mixture into the bowl with the yolks, whisking constantly. Scrape the warmed yolk-milk mixture back into the double boiler and continue to cook, stirring constantly, over medium low heat.
Once the custard begins to thicken (it should start to coat the back of your spoon or heat resistant spatula), stir in the chocolate and cook until completely melted.
Pour the mixture into a deep bowl and set the bowl over the ice bath. This stops the cooking process.
Refrigerate the base overnight, or for at least three hours.
Pour the base into your ice cream maker. Churn the ice cream until it reaches soft serve consistency, and either enjoy as is or cover and freeze. It’s best to consume within two days.
As a variation, once the milk and cream have simmered for 10 minutes as specified in the second step, you can remove the double boiler from heat and add orange zest to the milk. Cover the pot and allow the zest to infuse for at least 10 to 15 minutes. Proceed with the recipe as directed.

A couple of weeks ago my husband and I spotted their ice cream truck one block up the street from the Haagen-Dazs store where we had just bought cones. I mean just how much can you get for a scoop of ice cream anyway.
