The summer before eighth grade I traveled with a group of Girl Scouts to Mexico. As a rather self-conscious adolescent, this was somewhat mortifying — not mortifying enough, however, to pass on an opportunity to bond with a hundred thirteen-year-old girls in my last hurrah at summer camp.
We were housed in a hodge podge of cabañas near the city of Guadalajara. Peacocks roamed the premises. Arts and crafts abounded. We were taken on excursions to abandoned churches aflutter with bats, and to the local Barro negro pottery kilns.
And we were taken to the market. Our kind hosts tried their very best to turn us on to fried grasshoppers and other insect delicacies. (You can imagine the dramatic squeals of horror when this was presented to a bunch of squeamish pre-teens.) Horchata, on the other hand, that cinnamon-rich, super sweet agua fresca, was easy to say yes to.
Horchata arrived in Mexico by way of Spain, courtesy of the Moors. In Spain it is made with a little tuber called a chufa, or tigernut. In Mexico, chufas aren’t that easy to come by, so they’ve improvised with long grain rice to produce the horchata familiar to North Americans. It’s a cinch to make. You soak rice overnight in water (making rice milk, essentially). The following day you blend it, strain it, add sugar and cinnamon, and serve over ice. To turn this into an ice pop, I concentrated on the standout flavors — rice milk, sugar and cinnamon — and added a creamy element, which in this case is Greek-style strained yogurt.

Recipe for Horchata Pops
Yield: About 6 popsicles
2 cups long grain white rice
2 cups plus 3 tablespoons water, divided
1/4 cup sugar
1/4 cup Greek yogurt
1/2 teaspoon ground cinnamon
Cheesecloth
Ice pop molds

Preparation:
Combine the rice and two cups water in a glass bowl. Let sit overnight. (It’s not necessary to refrigerate.)
The next day, blend the rice and water thoroughly in a blender. Strain the rice water through cheesecloth placed inside a fine colander or sieve. Use a spoon to coax the liquid through the mesh.
While the liquid is draining, make a quick simple syrup. Combine the sugar with the remaining three tablespoons of water. You can warm it quickly in the microwave or simmer until just dissolved in a small saucepan.

Once the rice water has drained, combine it with the simple syrup, ground cinnamon and Greek yogurt. You’ll want to blend this thoroughly, so that everything emulsifies nicely and the cinnamon and yogurt don’t separate while freezing. An electric mixer or immersion blender are quite helpful here, but a fork and some elbow grease will get the job done.
Pour the horchata mixture into your ice pop molds. Freeze for about six hours. Then park yourself in a grassy field and enjoy.

Great summer article! In Texas,we call these "paletas." Paleta is the Spanish word for stake or stick. They come in many flavors from pina colada to even pickle juice (kids like to sprinkle chili powder on those)! Men peddle around our neighborhood on three-wheeled bicycles with freezer compartments selling them for a dollar. Their bikes have a string of bells across the handle bars that jingle and let you know they are outside. Restaurants and our major grocery store also sell the horchata flavor in a drink (called aguas frescas)--yummy!

If you do a search for "popsicle molds straw" it looks like there are other brands out there. I can't wait to try this recipe! I absolutely love the Arroz paleta that you can get from the street vendors here in Chicago, very excited to try and make my own. Re: the popsicle molds, I actually have the ones shown, and don't care for them all that much. The popsicles, once frozen, stick to the mold making it difficult to remove them without also pulling the stick out. And the popsicle would have to melt almost completely before the straw function is even close to being useful. In my opinion, it's not worth going out of your way to find them.

I'm gonna make a suggestion: instead of rice water, you can use milk. Boil the milk adding cinnamon and lemon zest (without the white part), then strain it, add sugar as you want and mix well. This is "leche preparada", another refreshing drink. You can make pops too :)

Has anyone tried making this recipe? Does any long grain rice do? I ask this because I followed the instructions and ended up almost burning my blender while trying to liquify my seeped rice. I had to up the quantity several times--I lost count of how much water I finally added to the recipe! But my 21-month-old son and I each had a glass of leftover horchata blended with ice and it was delish. Anyway, just wondering if anyone else had to add more water.

If I try this recipe again, I might let the rice sit in more water overnight. And I might throw it in the fridge to see if it makes a difference. Well, these are freezing up right now, so I can't tell you about them in their frozen state, but I did sample it before I froze it and it was kind of like drinking cannoli filling. Needless to say, awesome. I did cheat though. Rather than making rice milk from scratch, I used two cups of unsweetened almond milk instead so it took about 5 minutes tops. I've made almond and rice milk before, so I only feel a little bit like a slacker.

Love Horchata and in freezing it into a tasty desert is great!! I wonder how well medium grain rice would work for horchata since the starches are a little different.

I opted for the long-grain no-frills generic rice variety. I'd guess that in the end I must have doubled the quantity of water. But the pops came out great and tasted awesome... a ten-minute getaway from suburbia :)

Ahhh! My Mexico.... I'm so making this today, I'll use flour rice to speed the process. When I was young I used to buy agua fresca in my local market, to horror of the lady that sells the agua fresca I use to combine the Horchata water with limonade...yummmm! Try that!
