Two Octobers ago, I hosted a party centered around a theme: each guest would bring a dish that they prepared, and each dish had to include pumpkin. The only thing that wasn’t allowed was pumpkin pie. Savory was encouraged, but not mandatory. Nobody knew what to expect of the evening, including myself. Some guests worried that dishes would be repeated, some doubted their cooking abilities.
But you know what? It was one of the most amazing parties that I’ve ever hosted. Everybody rose to the challenge, everybody participated and nobody knew what the scope of the dishes would be. There was so much surprise: pumpkin arepas, pumpkin chutney, pumpkin curry, pumpkin arancini, pumpkin succotash. Not one dish disappointed.
One of my favorites from the evening was my friend Jacquelyn’s pumpkin seed brittle. It is the perfect homemade candy and its magic, addictive powers will carry you through any social event. You can employ any kind of nuts that you fancy and endless spice combinations. I love when a recipe’s power comes in the transformation of the simplest ingredients: melted butter, caramelized sugar and a handful of nuts join forces to create a crunchy, salty, sweet and spicy candy. Other than frequent stirring and a watchful eye on the candy thermometer, it’s remarkably simple.
Spiced Pumpkin Seed Brittle
Yield: About 6-8 servings
1 cup sugar
3/4 cup hulled pumpkin seeds (also called pepitas; feel free to use any tree nut you’d prefer)
2 tablespoons unsalted butter
1/2 teaspoon ground cinnamon
1/4 teaspoon chipotle chile powder
1/4 teaspoon ground ginger
1/4 teaspoon sea salt
1/4 teaspoon baking powder

Candy thermometer
(For the Pistachio Sesame brittle, use 2 tablespoons sesame seeds and 3/4 cup pistachios.)
Grease a 9×12 baking sheet with butter and set aside.
In a small, heavy-bottomed pot over a medium low flame, melt the butter with the cinnamon, chile powder, ginger and sea salt. Add the sugar and stir thoroughly. Continue to stir sugar almost constantly to prevent burning. When the temperature of the mixture reaches 280 degrees, add the nuts. Continue stirring almost constantly.
The sugar will slowly begin to clump and melt. Keep stirring! At 300 degrees, remove from heat and quicky stir in the baking powder.
Working quickly, pour the brittle onto the greased baking pan, spreading with a spatula. Let stand until thoroughly cooled and hardened. (You can expedite this by putting it into the fridge.)

My mom asks this, "I love pumpkin seeds, but I haven't been able to find any good ones here to buy. One year, we had the best pumpkins for the seeds. They were plump and the casings weren't very hard or thick. Never have found any like them since. Where can the seeds be ordered or what brand are those that are pictured here? The ones I can buy from David's seeds or the Mexican brands or the Armenian ones I got, aren't good at all. The shell is too tough. I'd love to try this!"

Me and my friends are having a pumpkin feast this year too. It's tomorrow actually. I did help folks along by giving recipes, though, and someone is bringing pie. It is a classic. I got a lot of the recipes from a cookbook called simply Pumpkin. It's by Dee Dee Stovel. I love it. I've made so many good recipes in it. One of the ones I am doing tomorrow is pumpkin gratin with caramelized onions and gruyere(bacon is also in it, as well as hints of nutmeg and thyme). Delicious.

Wow...looks amazing. I tried making candies with popped Amaranth, and I added Chipotle chili powder and white chocolate. It was like mouth heaven even if i do say so myself. Also can we have some more Mexican Immigrants here in London setting up grocery shops please? Wow, this sounds amazing. I have make brittle's every year for Christmas gifts, along with my baked goods. I have made several types: Peanut, Cashew, Mixed Nuts, Nuts with Peppermint, Brittle dipped in Chocolate, but this is completely NEW to me. I am going to have to try this one, especially because of the spices. Shhhhhh, don't tell anyone, but I make mine in the micro-wave. Amazingly easy.

Brittles are so delicious - a most perfect way to get your daily serving of nuts! Just make sure to store them in a sealed airtight container as the sugars can absorb moisture from the air and make the surface sticky over time. Our favorite fall treat would have to be warm apple cider, topped off with fresh whip cream from our handy issi dispenser- made with just heavy cream and some simple syrup.

I actually made this today ... there's not quite enough liquid to make the sugar melt easily ... it overheated before the sugar actually started to dissolve. You're better off trying a regular brittle recipe, and adding the spices to the corn syrup/water/sugar portion of it. It was quite a let down, but definitely inspired me to be creative with my second batch of brittle which turned out well.

I just made it-- and it tastes even better than it looks! Very, very, yummy:) When I make it again, I'll probably double the recipe since it doesn't make a ton of brittle. Also, if you plan to serve this to kids you may want to leave out the chili powder (I think it's a nice addition, but my daughter didn't) maybe nutmeg would taste good in its place...

Sorry to hear that it was a letdown, @cmoes. It's tricky getting it hot enough without burning the sugar, which is why it needs to be stirred constantly. Adding a little water is a good idea. I'm not a fan of corn syrup, though. :)

I just made this, but instead of chipotle I added bacon. Yum. There is a balance to stirring so the sugar wouldn't burn and letting it sit to get the sugar to melt. This took me about 30 minutes to make, so it is a constant standing, stirring, blending recipe from start to finish. Next time, i would double the recipe, like someone else said, because it did not make that much.
