Bara Brith is a Welsh tea cake, also known as Speckled Bread. I fill this cake with raisins that have been soaked overnight in Earl Grey tea, allowing for a beautifully moist crumb, and is made with self rising flour instead of yeast as is some recipes. This super moist raisin studded tea cake is wonderful at tea time spread with salted butter. Certainly no need to worry about it drying out in shipment, this lovely cake only gets better with age.
Re wrap in plastic wrap and store in the bread box, and nibble at your leisure!
