♥♥♥♥ CULINARY LAVENDER - EDIBLE or NOT? There is nothing biologically that makes a lavender edible or not. However, over time, the people of the mediterranean where lavender is native have developed a custom of using particular varietals for culinary purposes.
The super blue varietal preferred by the natives for culinary purposes has a deep rich intense purple color (makes it visually appealing) and a softer less floral fragrance. If you want the AUTHENTIC super blue grade CULINARY lavender as used in those super expensive herb de provence, look for the lavender called "super blue". it sells for about $30-$45/lb. The type of lavender sold in this listing has a very strong floral fragrance and a blue-grey color.
But in a way, this is like mozzarella cheese. Real authentic mozzarela is made from water buffalo milk; and is best eaten fresh same day it is made. But most of us are blissfully happy with our mozzarella sticks that is made from cow's milk, processed to within an inch of its existence, and God alone knows how long it has been in the industrial food complex before it gets to us.
