BLACKENED CAJUN FISH

My Husband, Vic, is a Cajun master and loves this recipe. He has perfected it and it is such a delicious meal that is fast and easy to prepare.
1 ½ lb cod fillets
1-2 TB SOUPER SPICES-CAJUN BLEND
4 TB Butter
¼ t salt (optional)
Lemon wedges
Lightly coat fish fillets with spices. Melt butter in a large skillet until it sizzles. (Cast iron pans work great). Add the coated fish and fry over medium heat for about 4 minutes on each side or until “blackened”. Serve with lemon wedges.
