Recipe for: Risi Bisi
1 package Souper Spices Risi Bisi Mix
2 cans (14 oz size) reduced sodium chicken broth
1/3 cup water
1 Tbsp. Butter
1/2 cup frozen peas, thawed
1/4 cup grated Parmesan cheese
1/4 cup toasted pine nuts (optional)
Butter the inside of your slow cooker or use an liner. Combine rice, onion, and garlic in slow cooker. Heat broth and water to a boil in small pan. Stir boiling liquid, Italian seasoning and basil into rice mixture. Cover and cook on low for 1 1/2- 2 1/2 hours or until liquid is absorbed. Add peas. Stir in cheese. Serve topped with pine nuts.
**Stove top directions: Bring liquids to a boil in a 1 quart pot. Add all ingredients except for The cheese and pine nuts and simmer for about 20 minutes. Stir in cheese before serving and top with pine nuts.
