Descriptions:
Munstead English Lavender (available again at a later date)(l. angustifolia,) is propagated by seed or cuttings, grows faster than most English varieties and is hardy to zone 5. There is a lot of variety in color from deep blue to soft pale lavender with soft green gray foliage. All of the English varieties produce less oil that is higher quality with a sweet scent and a lower camphor content. English Lavender is arguably the best lavender for culinary and aromatherapy applications. It is wonderful for other uses but the oil and flower buds are more expensive due to its lower production (than Grosso.) In Montana, Munstead blooms very early in June.
Hidcote (zone 5, seed or cuttings) is my favorite for color. This small 14" or so compact shrub is intensely blue violet. See the pictures and description on the Hidcote seed description.
All of the English varieties will grow more slowly. By the end of their first season they should be about 4 times the size they were when you planted them out. See the individual descriptions for their ultimate size and height as English varieties vary greatly.
When the plants have bloomed the first year, you can carefully trim off the flowering stems or just leave them on the plant. The second year you can prune lightly. Trim your plant in a rounded shape but don't cut too far into the wood. If you cut the flowers spikes off to dry them, that suffices as a pruning. Lavender is very easy to take care of once established. I hope you thoroughly enjoy it in your garden.
