"We gather beautiful green fresh basil from the garden, fresh pecorino cheese from the supermercato. And, quickly rummage through the refrigerator and pantry for garlic clove, pinoli, salt, and the Italian’s favorite, olio extra vergine di oliva. We prepare to taste, pulling the smaller basil leaves first – since they are more flavorful than the larger ones. Then, hand shred and blend with all shredded and chopped ingredients. And then, there was pesto. Homemade pesto. FROM SCRATCH. In which I so proudly cooked with an Italian."
