Summer to me is gardening. I do lots of canning and freezing. One of my favorite recipes is catsup. In order to make catsup you need lots of tomatoes. This is what inspired my entry for the summer challenge. Tomato leaf goats milk soap is perfect for the tomato lover in your house. It smells just like the plants out in the garden.
Catsup (This is an Amish recipe)
2 gal. thick tomato juice
2 1/2 c. vinegar
1 T. pickling spice mix
2 large onions
8 c. sugar
8 T. clear jel
1/2 t. cloves
1/2 t. cinnamon
7 T. salt
Boil together first 4 ingredients until onions are soft. Put through sieve; put back on stove and boil 1 hour. Mix the rest of the ingredients together in a bowl and moisten with water, then add to the juice. Boil 10-15 minutes more. Put in jars and seal. (I process this 30 minutes in a hot water bath)
