Two of the best and most fragrant heirloom white peaches combine to make this lovely jam. Silver Logan and Lady Nancy white peaches both have complex flavors and balanced acidity, unlike newer varieties of white peaches that can be so sweet they are cloying. For this batch I also added a tiny bit of Gravenstein apples (for pectin) and Meyer lemon juice (for an extra zing). But rest assured, the apples and lemons play very minor supporting roles here, the real stars are the white peaches. You don't need me to tell you this though, you'll know it the minute you taste the jam.
Fragrant, sweet, and the prettiest shade of Old Rose, this jam will inspire you to pull out the china tea cups, bake some scones, and invite your best friends over for tea.
