Feel free to order in advance for the holidays! Pick out which pies you would like to send (one mailing address per order) place them in your shopping cart, and then in the "specific instructions" just put when you would like for them to go out to. Make sure that the right address is in the etsy send box (I don't go by the paypal address) and everything should be peachy!
