Plump, sweet blackberries...bright and fresh for the picking! They translate so well over to jelly making. I used to pick them as a child on our sledding hill located in the woods behind my home. The hill's one side was lined with wild blackberry bushes where they would have full exposure to the sun. I would pick the berries to bring home to my mom, a wonderful baker, and it was a certainty that blackberry cobbler would be that night's dessert. So my love affair with blackberries actually started when I was very small. I do not know if the bushes are still there but they did their part creating fond memories and the hill itself, actually just a wisp of an incline, will always remain as "Deadman's Hill" from my childhood.
But we advance in time and I now go to the orchard to pick my fill of these happy berries. The bushes, in long rows, overflowing with berries, are fragrant with their deep, almost wine like aroma. Some eating is a must but the remaining berries are crushed to release their deep purplish black juice. A dark jelly with a rich full depth of flavor is then created.
Blackberry Jelly is one of my best selling jarred goods in the fall.
