All of our infusion are done without heat, so that the honey retains all the natural enzymes. Most of these infusions have been infusing over a year and have taken on a lot of flavor and naturally darkened a bit. Once we are satisfied that they are at the right flavor, we strain the hibiscus blossoms back out and put the honey into a 10 ounce square glass jar. The jar opening is large enough for a spoon, but narrow enough if you prefer to pour the honey out.
