I've been trying to eat healthier, but as the daughter of bakers, there are some "bread" like items I just can't give up. Here is my new favorite take on pancakes. They are a great way to cut out some calories and carbs to help offset that last slice of pumpkin pie...
Holiday Flax Protein Pancakes
Makes 4 average pancakes or 2 large flap jacks as shown in photo.
1/3 cup egg whites (or 1 large egg, or 2 med. eggs)
1/3 cup flax meal
1/3 cup protein powder
1/3 cup milk
1 packet of splenda (or sweetener of choice)
1/2 tsp apple pie or pumpkin pie spices
1/3 tsp baking powder
Mix dry ingredients well, then blend wet ingredients into dry. If using flavored pre-sweetened protein powder mix you can leave out the packet of splenda or sweetener of choice. Cooked, these are just slightly dryer than normal pancakes, so milk can be adjusted to your own preference. I'm hoping this recipe will work well for waffles too, but we'll see if there's a new waffle iron in our stocking this year to find out.
Top or layer with fruit and yogurt, or cream cheese and bacon, or your own favorite pancake toppings. Those in the photo have a layer of cream cheese between them and a slab of butter on top. I can't wait to try them topped with leftover sweet potato casserole, or cranberry sauce with a mug of homemade eggnog.
