Pineapple Sheet Cake
2 eggs
1 tsp vanilla
2 c sugar
2 c flour
2 tsp baking soda
1/2 c nuts, chopped
1 # 303 can (15 oz) crushed pineapple (juice and all)
Beat eggs. Add sugar, pineapple and vanilla and mix well. Sift flour and baking soda. Add to the above mixture. Then add nuts, mixing well after each addition. Bake in a greased and floured cookie sheet pan at 350 degrees for 25 to 30 minutes.
Icing:
1 stick oleo, softened
1 (8 oz) pkg cream cheese, softened
1 3/4 c powdered sugar
1 tsp vanilla
1/2 c nuts, chopped
Cream oleo and cheese. Add powdered sugar, vanilla, and nuts. Icing will be thick. Dab it on hot cake as soon as it comes out of the oven. Then spread the icing all over the cake. Icing will spread easy after it is on the hot cake.
