A wonderful treat to share with friends and family, accompanied with fine tea or coffee at any time of the day!
I developed this recipe to share with my daughter, but everyone else is very happy to eat it! This Chelsea Bun is made with a mix of tapioca and rice flours as well as eggs and yeast. It is light and has just the right texture. This recipe has a traditional filling of spiced mixed dried fruits as well as two alternative fillings: apple and almond, or almond and walnut. I use butter in the filling, however a suitable non-dairy substitute could be used.
All my recipes use ingredients that are readily available in supermarkets and health food stores.
