This is a meatless version of one of the most popular pasta sauce in Italy. "Sugo all'amatriciana" or sauce in the Amatrice style is commonly associated with Lazio and Rome, though it originated from the little town of Amatrice. The original recipe has no tomatoes and uses 'guanciale' a cured unsmoked bacon from pig jowl. It was only much later that tomatoes were incorporated into the recipe and has become the red sauce that we know today. In the little town of Amatrice, "sugo all'amatriciana" is served only with spaghetti. In fact the welcome signs to the city says: Amatrice, the city of spaghetti.
The Romans, however, have also claimed this recipe as their own. It is in Rome that this sauce is served with "bucatini", a thick spaghetti like pasta with a hole running through the center.
This meatless version made with bacon flavored vegetable protein, fresh tomatoes and herbs is just as delicious!

In years past we often served wonderful meals to our friends without comment only to reveal at the end that it was a vegetarian presentation. It was their reaction to the meals (and constant requests
for jars to take home) that finally pushed us into the Pipsqueek project.
All produce we pick from a local farm and prepared from scratch within 24 hours using only the highest quality ingredients ...no canned or frozen anything , ever. This food is simply delicious .....When eating it is best to concentrate on the tasty food itself and eliminate any preconceived ideas regarding the word "vegetarian"...it won't apply here . After a few Pipsqueek meals the word vegetarian will simply mean another tasty experience.

Long before commercially made "factory" food our grand and great grandparents ate farm grown, hand made food stuffs. While there have been tremendous improvements in life it is difficult to argue that today's corporate food factories create food that is more healthy and tasty than that of previous generations....'nuff said.
