I always remember St. Patrick's Day falling on a Tuesday or Wednesday when I was little. I remember being halfway through the school week, the weekend still far, far away, and not excited for a Holiday that didn't come with a day off of school. My brother and I would grumble and stumble down the stairs before the sun was up to find a stack of green pancakes waiting for us. It's the only thing I ever remember my Mom doing for St. Patrick's Day when we were little. This all changed when digging into our family tree we found one Kennedy, which Mom agreed made us 100% Irish. Those pancakes were the BEST pancakes ever. I know that the only difference was the green food coloring but there's something about that surprise of finding a special food waiting for you on a day where you just don't want to go to school or work that really gets you in the spirit and in turn gets you through the day. Not to mention that we hardly ever got pancakes for breakfast on a school day unless it was someone's birthday. Every year I looked forward to St. Patrick's Day and those green pancakes waiting for me
These brownies start with a rich chocolate and Guinness Stout base, making them dense, rich, and moist. Once cooled, they are drizzled with melted chocolate. They are the perfect brownie for St. Patrick's Day, the beer lover in your life, or as a rich treat for yourself. I've made these with the chocolate lover in mind by baking them to be thicker and cutting them into large rectangles. I believe that if you are going to have a brownie, you should have a Brownie!
