But a word of warning...these are super duper yummy and will be loved by everyone in the family.&lt;br /&gt;&lt;br /&gt;Enjoy!&lt;br /&gt;&lt;br /&gt;Chocolate Oatmeal Lactation Cookies&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1 C butter&lt;br /&gt;1 C sugar&lt;br /&gt;1 C brown sugar&lt;br /&gt;4 T water&lt;br /&gt;2 T flaxseed meal (no subs)&lt;br /&gt;2 Lg eggs&lt;br /&gt;1 t vanilla&lt;br /&gt;2 C flour&lt;br /&gt;1 t baking soda&lt;br /&gt;1 t salt&lt;br /&gt;3 C Thick cut oats&lt;br /&gt;1 Bag Chocolate chips&lt;br /&gt;2 T Brewers Yeast or Nutritional Yeast Flakes&lt;br /&gt;&lt;br /&gt;Preheat oven at 375.&lt;br /&gt;&lt;br /&gt;Mix 2 T of flaxseed meal and water, set aside 3-5 minutes.&lt;br /&gt;Cream butter and sugar.&lt;br /&gt;Add eggs.&lt;br /&gt;Stir flaxseed mix into butter mix and add vanilla.&lt;br /&gt;Beat until well blended and mixture turns a pale yellow.&lt;br /&gt;Mix dry ingredients, except oats and choc chips.&lt;br /&gt;Add butter mix to dry ingredients.&lt;br /&gt;Stir in the oats and then the choc chips.&lt;br /&gt;Drop on ungreased or parchment lined baking sheet.&lt;br /&gt;Bake 8-12 minutes. The 5 minute chocolate cake in a mug recipe has been going around the internet for awhile. I tried it. It sucked. Blech. I was never so let down by chocolate in my life. I *knew* there had to be a better way.&lt;br /&gt;&lt;br /&gt;So I played. I will admit that the first try wasn&amp;#39;t so great. It was better then the original but it wasn&amp;#39;t what I wanted. Tonight&amp;#39;s try did it. I even fooled my husband and taste tester. He got mad at me and told me I was supposed to be resting. I told him I whipped it up in the commercial break. He is now sold on the cake and might be requesting it every night.&lt;br /&gt;&lt;br /&gt;With out any more delay...here it is! ENJOY!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;The Ultimate Fast Chocolate Fix&lt;br /&gt;aka: The BETTER 5 Minute Chocolate Cake in a Mug&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1 tbsp all purpose flour (I actually used King Arthur&amp;#39;s White Whole Wheat because it&amp;#39;s what I had)&lt;br /&gt;3 tbsp sugar&lt;br /&gt;4 tbsp cocoa powder&lt;br /&gt;pinch of salt&lt;br /&gt;1 egg&lt;br /&gt;3 tbsp milk&lt;br /&gt;2 tbsp oil (I used plain vegetable oil but coconut oil would be better, I just didn&amp;#39;t have it)&lt;br /&gt;1 tbsp brandy (or other liquor, coffee, fruit juice or even just more milk)&lt;br /&gt;1 tsp vanilla extract&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;1. Mix flour, sugar, cocoa and salt in a large mug.&lt;br /&gt;2. Add all other ingredients.&lt;br /&gt;3. Cook in microwave for 2 1/2 - 3 minutes. (My microwave cooks hot/fast so I only needed 2 1/2 but you might need the full 3 minutes. You may need to play with this.)&lt;br /&gt;4. Let sit in microwave for 1 minute.&lt;br /&gt;5. Take out, put onto plate and enjoy!&lt;br /&gt;&lt;br /&gt;* This cake is a lot like what you would expect out of a flourless chocolate cake. It is very rich and satisfying and you *might* need to share this with someone else.
