Limited quantity specialty wildflower honey from the heart of San Francisco. Our honey is gathered in Noe Valley and surrounding regions by bees that are kept free of antibiotics.
Each batch from each season exhibits its own distinct characteristics based on the flowers that are available at the time the bees are foraging. Summer honey sources include Victorian Box, Bottle Brush, Pride of Madiera, and various stone fruit trees, including the many decorative plums in the neighborhood. Fall honeys exhibit more spices from lavender, rosemary, clover.
Our honey is kept raw and lightly filtered to remove most wax and other particulates. It is never heated and retains the benefits of the natural pollen and other nutrients gathered by the bees. Raw local honey is a great way to help overcome allergies since it contains traces of the pollens which allow the body to build up a tolerance to those allergens.
Of course many honeys crystalize over time, some faster than others depending on the floral sources. Some of our honeys will rapidly crystalize into spreadable creamed honey naturally. But should you wish to reliquify any honey simply place the jar in a bath of warm water (a sauce pan of hot water from the tap works fine -- or you can gently heat the water over a low flame on the stove) for a few minutes until the honey is liquid again.
