This cooking knife was hand-forged from ball bearing steel (1.3505). This steel is extremely fine-grained and hard. This makes it very fine to grind and is extremely cut-containing. The long, narrow blade, with its upward edge, is excellent for preparing meat, fish and vegetables. The cutting edge is on the board for a length of about 10 cm, which is ideal for cutting vegetables. Then it is gently pulled up, which makes it easier to prepare meat. The slightly curved back can be used to push the cut vegetables or meat into the cooking pot with the back of the board without changing the tool or abusing the cutting edge. This makes it unbeatable in the kitchen and very clearly tailored to professional chefs. The blade was hardened to around 62 HRC (hardness after Rockwell). The handle has been glued with 2-K glue and consists of elm lumber with a brass clamp. The wood was finely ground and treated with wood oil. The clamp has been polished to a high gloss. The blade is equipped with a very fine hand finish and is brought to an extremely high sharpness.

This knife is not stainless and should therefore be carefully cared for.
The blade is at the cutting edge only about 0.1 mm fine and therefore very cutting-happy and slightly intensify.
It should not be used for boning.
