**This jar is already made and ready to ship. It is part of the set of slightly flawed jars that I am putting onto this etsy page. Why is this beautiful, completely functional jar discounted, selling for $120 instead of $200? There is a small surface crack in the water seal rim of the jar. You can look at a close up of this tiny crack in the last picture of the jar. The chances that this tiny, tiny crack, less than three inches long, will cause you any troubles is very, very slim. However, as I have not had the time nor the ambition to test my theory using a jar with this kind of flaw, I cannot assure you that there could never be a problem with it. I can only say that my best, most assured opinion is that the crack will not ever present any issues. It is very small. It does not run deep, or affect the inside of the jar, or the jar structurally. The water seal well will be filled with water when the jar is in use, and with proper cleaning and drying of the jar, there should be no problems. This is a great opportunity to purchase a stunning piece of work that I am discounting because I'm a perfectionist. This jar happens to be a little larger than my current pieces, and it has the strap handles that I originally put on all of my jars. I will not be making more jars with handles like these.**

**Why is $120 a fair markdown? If you purchase this jar, you are still purchasing a handmade piece of functional art. My prices are still competitive with mass produced, imported jars that are not designed with the aesthetic consideration and love that I put into my pieces. I do not sell jars that have compromised functionality. Minor flaws that surface after the finished piece has been through its final firing are an inherent part of the process of handmade ceramics; the most experienced potters always have a percentage of pieces that are not entirely perfect according to modern standards.**

Vegetable Fermentation Crocks, handmade in 2012 by Sarah Kersten in Berkeley California, featuring a Water Seal and custom fit fermentation weights.

This Ceramic Vegetable Culturing Jar is specifically designed to make it easy for you to make live culture vegetables at home, on your kitchen counter. Made by a skilled craftsperson who is passionate about the fermentation process and tradition, the jar is intentionally created to be an aesthetically inspiring addition to your life while also being extremely durable, foodsafe, and reliable.

These jars have an unusual lid design that has origins in ancient china. The lid of the jar sits in a well of water while the vegetables ferment. This "Water Seal" feature streamlines the fermentation process by keeping outside oxygen out of the jar. Without outside oxygen, mold or other contaminants are not able to grow in or on the fermenting foods. The jars help you make perfect sauerkraut, kimchee, or other fermented foods every time, without needing to periodically scrape layers of mold off of the surface of the fermenting vegetables. Fruit flies can't get in either!

A second great benefit of using Counter Culture Pottery Vegetable Culturing Jars is the containment of the smell of the fermenting vegetables. The water seal feature stops air circulation, and almost entirely eliminates the pungent odors of the fermenting foods (until the jar is opened).

The jars are made out of high fired, porcelaneous stoneware. I have personally been testing them continuously in my kitchen by crafting a variety of fermented foods for a year and a half, and I have not seen a single sign of change or wear from use. The inside of the jar is purposely glazed to be resistant to corrosion, and it is my intention that every jar will have an extensive lifetime of regular use in your home.

With the purchase of this jar, you will further explore the modern revival of cultural traditions. If many of us look back only one or two generations, we will encounter live culture foods being made by our families in our homes. As modern life got faster and faster, the practice of home fermentation was put on the shelf. Today, fresh fermented foods are becoming popular again, and can be seen in thriving restaurants and at crowded farmers markets. These jars are designed to help you make fresh live culture foods in your home. Enjoy creating a healthy, traditional food on your kitchen counter, in a contemporary, handcrafted vessel.

Each jar holds one gallon. Each jar comes with a set of weights to keep vegetables submerged below brine water. Each jar comes with a ten page booklet about the jar, proper usage, and some recipe ideas.
