This booklet contains four recipes for gluten free pastries. Working with these basic recipes and your own creativity you will be able to make foods that you, your family and friends can enjoy together. There are also notes for variations of the recipes and a brief section about the gluten free flour mixes I use and recommend.

This collection also includes notes to help you get the best from the recipes. All four recipes make dough that can be worked and shaped the way you use regular pastry. The Buckwheat Pastry is dairy free.

When I knew I could bake enjoyable gluten free bread I turned my attention to gluten free pastry. Here was a real challenge. I began with the pastry making techniques I was used to using with wheaten flours, but found that they simply didn’t work. So I started to think differently about the challenge. With gluten free bread I had begun to consider the qualities that various ingredients gave to the mixture, and to the final product. With my growing knowledge of gluten free flour and other ingredients I knew I could make bread dough, so, I reasoned, it must be possible to make a good pastry dough that is easy to handle, and that would taste good and have a pleasant texture too!

As I develop my recipes I look for nutrition, taste, texture and appearance. These criteria must be satisfied first. I also work hard to keep my recipes simple so they are easy to make.

All my recipes use ingredients that are readily available in supermarkets and health food stores.

Each pastry can be frozen for use later. As with regular pastry, frozen gluten free pastry should be thawed before use.
