made from pine wood and a thin plastic mesh, perfect for sifting wholemeal flour

Bannetons:
Heavy-duty wicker basket, linen-lined, totally handmade in Portugal.
Lining fabric is a 50% linen / 50% cotton fabric with elastic. Capacity up to 800 g of dough. All materials are sourced locally in Portugal, and every item is carefully handmade in small-scale batches.

Wicker baskets are ideal for fermenting naturally leavened bread (sourdough) because they allow for the dough to rest during the last fermentation while supporting the weight of the dough so that it can rise. It can also be used as a serving basket for bread and pastry.

The liner can be removed for washing. I recommend hand washing only with warm water after each use, or not at all if you're using it for bread proofing: just spray it with water, dust it with a good layer of flour, and let it sun dry to create a durable flour coating. Repeat this process twice before using it for the first time.
