Water or fruit kefir is a good replacement for industrial sodas at a lower cost.
The grains are packaged very fresh, they are not perishable but their activation must take place upon receipt for optimal success.

Here are the recipes I use for my preparations:
FIRST OF ALL: AVOID ANY CONTACT OF GRAINS WITH METAL UTENSILS (spoons, strainers, containers)
ALL INGREDIENTS MUST BE AT ROOM TEMPERATURE
BASIC RECIPE:
for 1 liter:
In a 1.5 liter glass jar:
– Place the entire quantity of kefir grains after rinsing them under water in a plastic strainer.
– Pour in non-chlorinated water, preferably mineral water to keep the grains longer.
– 2 tablespoons of brown sugar, preferably organic, or white. Do not replace sugar with sweetener that does not nourish the kefir grains.
– half a lemon, preferably organic and well washed, sliced into quarters or rounds.
– 2 dried figs.
– Cover with a cloth and let rest at room temperature (18° to 25°). Place the jar away from light for 24 to 48 hours: your taste will determine the fermentation time.
– At this time, filter everything through a plastic strainer, put the liquid in a tightly closed bottle. Rinse the kefir grains well before using them again.
Then leave to ferment for around 24 hours. The fruit kefir is ready to eat. You can place it in the refrigerator to prevent fermentation from continuing.
Start the recipe again! The Kefir drink will keep for around 4 to 6 days in the refrigerator, which is why you should prepare it as you need it.
OTHER RECIPES TO VARY THE PLEASURE:
Put grains, water and an acidic fruit, one or more dried fruits and sugar in a jar:
– With lime: 1 lime sliced into quarters or slices and a fig
– With orange: 1/2 orange sliced into slices and a fig
– With grapefruit: 1/3 or 1/2 sliced grapefruit and a fig
– With tangerine: 2 sliced tangerines and a fig
– With lemon juice: the juice of 3 lemons and a fig
– With orange juice: the juice of 4 oranges and a fig
– With grapefruit juice: the juice of a grapefruit and a fig
– With tangerine juice: the juice of 4 tangerines and a fig
– With citrus juice: a mixture of various citrus juices and a fig
– With blackcurrant: approximately 35 gr of blackcurrant (fresh or defrosted), 1/2 fig, 1/4 lemon. Pink-red colored drink
– With raspberry: small raspberry coulis (fresh or defrosted), 1/2 fig, 1/4 lemon. Dark drink
