Starter Cultures

**You may substitute one or two of the above yogurts for our heat-loving (not room temp fermented) Greek yogurt starter and/or Bulgarian starter if you wish. Many have opted to do that, just let us know if that is your preference.

***Matsoni (pronounced “madzoon”) Caspian Sea Yogurt***:
CSY is a fermented milk yogurt from the Republic of Georgia. It is smooth and creamy and somewhat viscous with a mild, slightly tart savor. In Japan, it is poured over cakes, salads, and fresh fruits and is relished sweetened with a little honey.

***Viili (pronounced “Fee Lee Ah”)***:
Viili is a fermented milk yogurt from Finland. It is thick and viscous, almost jelly like, very “ropey”. It is mildly sweet and pleasant tasting. Viili thrives on cream. Make it with half and half for a rich dessert. Eat it plain, served with fruit and berries, or sweetened with honey, sugar, or Stevia. Because of its gelatinous texture, Viili makes delicious parfaits.

***Fil Mjolk***:
Fil Mjolk is fermented milk yogurt that comes from Sweden. It makes a creamy custard yogurt with a very pleasant buttermilk taste and is delicious eaten plain or served with fresh fruit. You can also make clotted cream by making Fil Mjolk with half and half and enjoy what the Europeans call Crème Fraiche (pronounced “Crem-Fresh”).

***Piima (pronounced “Pee Ma”)***:
Piima is a Scandinavian fermented milk yogurt, a soft custard yogurt that is light and creamy with a slight buttermilk tang and a mild cheese flavor perfectly blended. It is ideally suited for making buttermilk salad dressing – just add your favorite spices and vinegar and mayonaisse. It is also good eaten plain or with added fruit or fruit juices.

***Buttermilk***:
Cultured buttermilk is a refreshing drink as well as a great addition to recipes such as pancakes and biscuits!

*All of these are fermented at room temperature right on your counter - no need for a yogurt maker!

*These cultures help increase natural intestinal flora, helping to prevent the development of pathogenic germs, including salmonella, E. coli and Candida.

Each yogurt starter makes a delicious homemade yogurt that is idea for easy home yogurt making. No need of boiling and cooling milk before use or incubating your yogurt starter in a warm oven or home yogurt maker for hours before it will set. These yogurt starters are instead cultured in cold milk and are placed right on your kitchen counter and allowed to set. In about 12-18 hours (although it could take longer) these yogurt starters will have set and made tempting homemade yogurt, which after chilling, is ready to be flavored or eaten plain. All without the expense and bother of a home yogurt maker. By setting aside some of the yogurt from each batch of freshly made yogurt as your yogurt starter or seed to make your next batch of fresh yogurt, these yogurt starters should last you indefinitely. No need to periodically replace your yogurt starters in order to replenish your yogurt supply.

We supply FRESH yogurt starter cultures, enough to get you started making 1 cup of yogurt for your first batch. After this first batch, you will have enough yogurt to make larger batches, each time. Make once a week to sustain viability of the yogurt starter culture.

***HOWEVER, IF YOU WOULD PREFER A DRIED CULTURE, WE CAN SEND YOU WHAT WE SEND OUR INTERNATIONAL CUSTOMERS, AS NOTED BELOW. PLEASE SPECIFY AT CHECKOUT IF YOU PREFER THAT. EITHER WAY IS FINE. DRIED IS BEST IF YOU THINK THE PACKAGE MAY BE SITTING IN INCLEMENT WEATHER FOR A PERIOD OF TIME IN YOUR MAILBOX.

**FOR INTERNATIONAL CUSTOMERS, WE WILL SEND YOU DRIED CULTURE ON ORGANIC COTTON, enough to get you started making 1/2 cup of yogurt for the first batch, but then you can make a larger quantity for your second batch.

*If you are using raw milk, you will need additional steps in order to maintain a pure seed starter to make your yogurt with your cold raw milk. This is explained further in our instructions.*
