"This is a book about making all kinds of jam with low sugar pectin. It’s also a book about marmalade and jelly and flower jellies and savory jams and glazes and chutneys and then I threw some sauces in for good measure, because they’re sort of like jam. (Stop rolling your eyes.) And then there’s chocolate jam. Which is really ice cream topping, but who cares? I put it in here.
But here’s the thing - this isn’t an encyclopedia of jam. It’s not a compendium of jam and jelly and jam-and-jelly-like things. It’s not intended to be your definitive resource for All Things Jam.
It is intended to be a collection of recipes for jam and jam-like things from the first couple years of my blog. (It’s a great blog full of all sorts of fun information and ideas and recipes and photos of country life. You should read it: www.rurification.com.) All of these recipes first appeared on my blog.
However - and this is a big However - I have polished and standardized these recipes, so many of them are not exactly as they appeared on the blog. There is a new generation of folks out there who want to learn these skills and I had you in mind as I wrote. I tried to make the recipes and techniques a bit easier and more foolproof. I standardized the formulas so they’d be easier to remember and easier to use as jumping off places for your own delectable jam combinations.
There are more than 180 recipes and variations in this little book. Check the bottom of every recipe to find suggested variations in fruit or flavor that will expand your jam repertoire..."
