The Bunka knife is a versatile japanese type all-purpose blade similar to the Santoku, but with a sharper K-tip and a slightly shorter profile that provide superior precision and control for detailed work. Its extra blade height offers added knuckle clearance, making it more comfortable for repetitive chopping. A lesser-known design outside Japan, the Bunka is nonetheless a favorite among knife enthusiasts and professionals for its balance between versatility and fine-cutting performance.

渦 HANDMADE SUPERIOR BLADE

Crafted from 67 layers of stainless Damascus steel with a VG-10 core, this blade delivers exceptional sharpness and edge retention. Hardened to HRC 60, it surpasses the typical Western kitchen knife (usually HRC 55–57) in hardness, allowing the edge to stay sharp far longer between sharpenings. The 15° double bevel edge provides a perfect balance between precision and durability, ensuring effortless slicing with minimal resistance.

渦 TRADITIONAL WA HANDLE

This Bunka comes with a full-size octagonal Wa handle available in two variations.
The Classic Walnut & Cherry option offers a warm, natural look. It is first treated with boiled wax to seal the wood, then finished with a light oil coat to enhance smoothness. Occasional re-oiling or waxing helps maintain its natural feel and appearance.
The Verdant Birch & Cherry option uses stabilized birch wood, providing enhanced resistance to moisture and temperature changes. While low-maintenance, a touch of oil can occasionally be applied to revive the grain and enrich the colour.

Both handles offer excellent balance, grip comfort, and a refined handcrafted finish.
