You will receive live Water Kefir Grains (not dehydrated). They will be mailed in a sealed food grade bag to ensure freshness and viability. I prefer to ship all orders on Mondays or Tuesdays. If you want your order to go out any other day, I can do that as well, please message me with the request.

Water Kefir Grains (tibicos, sugary kefir grains) are a culture of bacteria and yeasts held in a polysaccharide biofilm matrix created by the bacteria. As with milk kefir grains, the microbes present in water kefir grains act in symbiosis to maintain a stable culture. Water kefir grains can do this in many different sugary liquids, feeding off the sugar to produce lactic acid, alcohol (ethanol), and carbon dioxide gas, which carbonates the drink.

INSTRUCTIONS FOR WATER KEFIR

1. Mix water and sugar in a glass jar until sugar crystals dissolve.
- 2 cups of spring or filtered water
- 2 TBSP white sugar
- pinch of baking soda for minerals (occasionally, not every time)

2. Add 2 TBSP kefir grains

3. Cover with a breathable cover such as double coffee filters or paper towel, secure with rubber band and let it ferment at room temperature (70-80F) for 2-3 days. You might notice small bubbles rising to the top if you gently move the jar, but kefir will not be fizzy at this point.

4. Stain the grains and repeat the recipe. Its recommended to use nylon mesh strainer and avoid metal. Bottle and store the water kefir in the refrigerator to stop fermentation.


Secondary Fermentation (2F)
This involves adding juices or flavors to the kefir beverage after the grains have been removed. Bottle the kefir beverage. Add any flavors or juices to the Kefir beverage and let it ferment out of the refrigerator for about 12 hours. Then place it in the refrigerator.

Possible additions:
- Any frozen fruit juice concentrate
- lemon or lime juice for delicious lemonade or limeade
- bottled fruit juice (cranberry, grape, orange, peach, mango, pomegranate, apple, raspberry, etc.)
- ginger
Experiment with dried fruit (raisins, apricots, cranberries, figs, etc). Many of these additions would hinder the kefir grain growth if used in the first fermentation but are great once the grains have been removed.

Sugar
Cane sugar, evaporated cane juice, coconut palm sugar, organic cane crystals, sucanat sugar and even dates. Don’t use honey! Honey has antibacterial properties that can harm the bacteria and yeasts found in water kefir.

All orders are shipped out on Mondays and Tuesdays to minimize the risk of them being stuck at the post office over the weekend. PLEASE NOTE: If you want your order to go out any other day, I can do that, please message me with the request.

Orders placed on Tuesday after 12pm PST will be shipped the following Monday, unless otherwise requested.
