"Tosa Uchihamono" (Cutlery industry in Tosa) is traditional manufacturing process of Japanese Knives based in Kouchi Prefecture. Originated from Japanese sword forging. It has more than 400 years of history with traditional skills.


MATERIAL

Aogami #2 Steel - (Blue Steel #2)
Aogami #2 Steel has same Carbon Content as Shirogami #2 Steel with additional element Harmonium and Tungsten. With these additional ingredients, Aogami #2 Steel blade can have better edge retention and durability.

Shirogami #2 Steel - (White Steel #2)
Very purity Carbon Steel material, often be used for Japanese Traditional Style knives. Shirogami #2 Steel blade kitchen knives can have great sharp edge after the re-sharpening.

Kakishibu - (Persimmon Tannin)
In Japan there is a traditional natural dye called "Kakishibu" which is extracted from unmatured greenish persimmons of golf ball sized.


MANUFACTURING PROCESS

Hontanzo - Steel is trained many times by the hand of the Blacksmith. And Steel without impurities is completed. This method trained to kick steel called Hontanzo. The 95% of Japanese Style Knives is the kitchen knife of the mass production. They are clipped out now by a press airplane or cuted. 5% of Japanese Style Knives is Hontanzo.

Warikomi (Awase) - Type of cladding, "Soft steel cladding" applied on the sides and the spine of the "Hard steel core".

Koufuse Tsukuri - Type of cladding, "Hard steel cladding" applied on the sides and the spine of the "Soft steel core". Same Manufacturing method with Japanese swords. Only few people in Japan can create knives by this process.

Kurouchi - The surface of the blade is blackened by an oxide film when it is put in the fire, made red hot and hardened. Though the black part can gradually disappear with repeated sharpening, we leave it into unpolished because it doesn't rust easily.
