Choose not to eat dairy but miss cheese? This kit is Urban Cheesecraft's response to customer questions about using nut milks with our dairy-based kits. While that is not possible, I created this kit for an impressive alternative. It makes at least 10lbs of cheese total.

The mozzarella is tender and can be sliced, shredded and melted for your pizzas, panini or even quesadillas! I give you two recipes so you can customize for your needs. One is a melted mozzarella that doesn't have to be shaped. You dollop it right onto pizza or whatever else needs deliciousness. An awesome bonus---> I teach you to make fondue with it! It's insanely good.

The other is the classic shaped mozzarella you see in the photos. Just think of the custom flavor options available when you make your own cheese!! Add sun-dried tomatoes, fresh herbs or chopped jalapenos for your own creations. Shape balls in an ice bath or make wheels.

You also get two recipes for ricotta- one does well with soaked nuts or seeds, the other calls for pre-ground nuts so you can whip it up instantly. You can choose to culture your ricotta (using your own recipe, no cultures included) and keep it raw too.

How much cheese does a kit make? I gave you enough supplies to make 5 batches of mozzarella and at least 15 batches of ricotta- great for lasagna!

How much cheese does a batch make? Between 1 cup to 1.5 cups depending on the cheese you choose and custom choices. It's a good amount for a week's worth of use, or a nice dinner party. If you make a pizza you will probably have leftovers! :)

Do you have to culture or age these cheeses? These recipes do not call for culturing, aging or fermentation though theoretically, the pureed nuts or seeds can all be cultured with success if you wish- use your favorite method. Do note that it takes longer to do that and the probiotics created would be killed in the heating step with the mozzarella, though you would get some tang (like the citric acid gives so you may want to omit it if you do culture).

What else do you need? A strong blender or food processor is a must when using whole nuts and seeds, unless you are ok with small bits. The ground nut or seed and cooked bean or zucchini variations do fine with regular, low powered choppers, mini blenders or hand blenders. Other than that, you just need a small pot, measuring cups and spoons etc. Regular kitchen supplies!

How long does it take from blender to mouth? 20-30 minutes! It's awesome. Some nut choices require overnight soaking for super silky mozzarella but I give you many tips and options to choose from. If you're in a big hurry, make the melted mozz out of almond flour- 10 minutes!

Is the kit 100% vegan?
Yes, I named it dairy free because I wanted to make it clear that it is also appropriate for other diets like paleo and allergen-free.

What happens when I run out of supplies? We sell refills of cheesecloth, citric acid and flake salt in our Etsy shop. Tapioca flour is pretty easy to find at grocery stores. We can provide refills of our excellent agar powder once people start asking (it is much better quality and easier to work with than the common stuff). If it's tough for you to find tapioca flour, we can provide refills of those too. Just ask. UPDATE- I will create refill packs at the end of the year as a result of the Kickstarter project.

In an age of increased food allergies and sensitivities, I created this kit with an appreciation of homemade food and customized diets. I fully support people in finding what works for them and sometimes that means picking and choosing food groups. Urban Cheesecraft is responding to the feedback from customers who wish they could use our regular dairy cheese kits with almond milk or another alternative. Though that is not possible, I've developed this new kit to work with nuts, seeds, their flours/milks/butters as well as white beans and even veggies. The kits could work for people following a vegan, paleo, auto-immune protocol or allergen-free diet, though I leave it for the individual to fully research. I hope this new kit will help support people in a small way as they find what makes them thrive.

FOOD SAFETY AND HANDLING: Please note that my kits and their supplies are hand-poured, hand-folded and assembled in a food-safe, fully-licensed space. The food items are all gluten-free but packaged in a room that may come in contact with wheat, soy, corn, nuts and other food allergens (following dept of agriculture cleaning guidelines in between of course). Just so you know. Ok! That's all I can think of. Dive in!
