This is an ancient formula conjured by Carmelite nuns at the Abbaye St. Juste for King Charles V of France in 1375. It is warm and spicy, infused with angelica root, fresh lemon balm, coriander seeds, whole crushed nutmegs, cinnamon sticks, whole cloves and fresh lemon zest.

I made this brew quite a few years ago now when I first started mixing things up with a mind to sell a batch. I found this recipe in a very old book at the Brooklyn Public Library. I think it was the first time I'd ever requested a book from the call desk. I found the information needed on a dewey decimel card and took it up to the desk and waited close to a half hour before it arrived. Summoned up from the depths of the stacks was a small, very fragile, early 19th Century book in a custom box. It was a treasure trove of formulas for distilled spirits such as Queen of Hungary Water, Absinthe, herbal liqueurs, bitters - and Carmelite Water. The recipes were written out in measurements like handsfuls or wineglassfuls, and cupeths. I was unprepared and had to scribble down recipes on the backs of call slips. I foolishly never wrote down the book title or author so the source eludes me until I get back to the BPL, all these years later. I probably won't find it on a dewey decimel card.
