Kimchi is a national Korean dish made of seasoned vegetables and salt. Koreans eat it at nearly every meal. It can be fresh, like a salad, or it can be fermented. It also is the main ingredient of many Korean dishes.

Kimchi Seasoning Blend is made with Korean Red Chiles, White and Black Sesame Seeds, and Coconut Sugar.

Complimentary Recipe(s):

Kimchi
Makes 1 gallon

Equipment Mise en Place: Cutting board, Chef’s knife, food processor or blender, colander, measuring cups, measuring spoons, one gallon glass jar or 4 (1-quart) glass jars

Ingredients:
1 cup plus 1 Tablespoon coarse sea salt or kosher salt
Water
2 heads Napa cabbage, cut into quarters or 2-inch wedges, depending on size of cabbage
1 bulb garlic, cloves separated and peeled
1 (2-inch) piece of fresh ginger root
1/4 cup fish sauce or Korean salted shrimp
1 Asian radish, peeled and grated
1 bunch of scallions, cut into 1-inch pieces
1/2 cup Kimchi Seasoning Blend

Accompaniments:
Sesame oil (optional)
Sesame seeds (optional)

Method:
1. Dissolve 1 cup salt in 1/2 gallon water. Soak cabbage in salt water for 3 to 4 hours.
2. Combine garlic, ginger, and fish sauce or salted shrimp in food processor or blender until finely minced.
3. In large bowl, combine garlic mixture, radish, scallions, seasoning blend, and 1 Tablespoon of salt. Toss gently but thoroughly. (If mixing with your hands, be sure to wear rubber gloves to avoid chili burn.)
4. Remove cabbage from water; rinse thoroughly. Drain in colander, squeezing as much water from the leaves as possible. Stuff radish mixture between cabbage leaves, working from outside in, starting with largest leaf to smallest. Do not overfill, but make sure radish mixture adequately fills leaves. When entire cabbage is stuffed, wrap one of the larger leaves tightly around the remaining cabbage. Divide cabbage among 4 (1-quart) jars or place in 1 gallon jar, pressing down firmly to remove any air bubbles.
5. Before serving, let stand for 2 to 3 days in a cool, dark place. Remove kimchi from jar; slice into 1-inch-length pieces. If serving before kimchi is fermented, sprinkle with sesame oil and seeds. Refrigerate after opening.

International (and domestic) customers please note that estimated shipping rates are based on kraft box packaging weighing less than 8 ounces. Glass jars filled with product can weigh up to 8.25 ounces per single jar. Ordering several jars is a welcome option, but will require payment of additional shipping fees. The same applies when ordering products packaged in 8 ounce zipper pouches.
