Description

Viili is a yogurt-like mesophilic fermented milk that originated in Finland. It cultures at room temperature into a ropey, mild yogurt with a fairly thick consistency. It does have a ropey texture. It ferments and cultures on the counter top at room temperature (70º-77ºF).

You will receive 1 packet of dehydrated Organic Viili starter. To rehydrate, pour the culture into a pint size glass jar, add 2 cups whole milk (cultures love fat), stir well and cover with a breathable cloth (coffee filter works great) and rubber band. Let it culture for 24 to 48 hours at room temperature. When it thickens, you can tip the jar and it should pull away from the jar as a mass instead of being liquidy. One it gets thick you can pull 1/4 cup from it and and now start a bigger batch at a quart. The basic ratio is 1 tbsp of starter to 1 cup of milk. Since it's a true heirloom yogurt you can keep doing that indefinitely. Once you get your start from the already done yogurt now you can flavor it. Just add fruits, add it to smoothies or you can make your own chip dip, ranch, french onion etc. You can even take the yogurt and strain it further with a fine mesh strainer or reusable coffee filter that you can find at most stores and get even more of they whey to come off. It makes a thick cheese.

*Raw Milk*
Please note if you are using raw milk, you need to pasteurize, as it can overpower the bacteria in the yogurt culture.

Shipping policies

All orders are shipped out on Mondays and Tuesdays to minimize the risk of them being stuck at the post office over the weekend. PLEASE NOTE: If you want your order to go out any other day, I can do that, please message me with the request.

Orders placed on Tuesday after 12pm PST will be shipped the following Monday, unless otherwise requested.

INTERNATIONAL ORDERS: The customer is responsible for any custom situations in their country. Find out all the information regarding custom fees prior to placing your order, as there will be no refund for the orders held by the customs.
