FYI I filled my dummy head with sand and used some high quality lapel microphones. Then I got some cheap cat toys to use as windscreens. Overall the whole project cost me less than $150 (minus microphone costs) and the quality was surprisingly comparable to a much more expensive binaural head. Keep in mind that the quality of microphones you select will play a big role in the recording quality. I picked the MS-BMC-3 and bundled it with the rode mobile adaptor which lets me use an iphone to record in stereo.
