DOWN & DIRTY CHOCOLATE is a hands-on class for the home chef or chocolatier in tasting chocolate, creating ganache, and forming and finishing magnificent chocolate truffles.

This is an ONSITE CLASS that takes place at Dancing Lion Chocolate in Manchester, NH, USA. Please only register if you or your giftee is willing and able to travel to our facility for the class. You'll find more information on our website, at dancinglion.us/cacao/school. Have you always wanted to work with chocolate professionally or at home? Does the very smell of warm chocolate tear at your inner being? At the Dancing Lion School of Chocolate & Pastry you will learn from Master Chocolatiers and experienced bakers. Our classes take place in our shop kitchen and are HANDS ON.

POLICIES:

Please call us at 603.625.4043 as early as possible if you are unable to attend the scheduled class. Once the class is fully-booked, we can only reschedule or refund you if we're able to re-book your space.

THE DAY OF THE CLASS: We do not offer refunds or rescheduling the day of the class. If something comes up at the last minute, please find someone to attend in your place, and call us at 603.625.4043 so we know to expect them.

    As always, a treasure box of confectionary delights! Beautifully crafted, wrapped and packed with care. My mother, who is normally very restrained in her chocolate consumption, could not resist them, and they disappeared one by one from the box like a vanishing trick! :D Thank you!!! Truly a marvelous Mother's Day treat for her.

    This drinking chocolate is excellent.
    Mayan Heat: The spices are well balanced with the chocolate. Just the right bite, with a smooth chocolatey finish. Perfect for the chilly spring evenings.
    Creamy Dark: a nice blend of milk and dark chocolate. I would probably recommend this to guests at my home over the Mayan Heat partially because most people I know think ketchup is spicy and partially because I am hoarding the Mayan Heat for myself as I am a little obsessed with it!

FAQs

Unfortunately, Summertime can be hot and chocolate melts, so I have to ship next-day air with thermal packaging to ensure your order arrives unmelted and perfect.

As the weather begins to cool, we can return to regular Priority shipping, which is much less expensive.

Few chocolatiers are willing to ship during the summer, but I prefer to give my customers the choice.
IF THE TEMPERATURE at the destination is no warmer than 69 degrees F (21C), you should be able to ship with any option, depending on when you'd like your chocolate to arrive.

IF THE TEMPERATURE at the destination is between 70 and 75 degrees F (21-24C), we will wrap your product, if possible, in special thermal packaging and you must ship USPS PRIORITY (2-3 days).

IF THE TEMPERATURE at the destination is between 76 and 85 degrees F (24-30C), we will cold pack your chocolate and you must ship USPS PRIORITY EXPRESS (next day).

We regret that we are unable to ship chocolate to destinations where the temperature is above 85 degrees F (30C) or to international destinations where the temperature is above 75 degrees F (24C).
Let me say first that I work closely with our chocolate makers and farmers, and am very comfortable with their farming and labor practices.

Fair Trade has been shown to be mostly ineffective with cacao farmers(1). First, because most can't afford certification, and second, because many of the requirements for Fair Trade (or Organic) are impractical or impossible for the farmers.

The Fine Cacao industry has been focused on improving the position of the farms. For instance, Danta Chocolate, the Guatemalan maker of several of my chocolates, sets aside $25 per ton as an "emergency fund" for each farm, and we recently shipped $1,000 worth of school supplies to the children at the farms.
