My Epis Seasoning Blend embodies the herbaceous yet fiery flavors of Haitian cuisine. Epis is used as a as a marinade for meats, seafood, stews, curries, soups and one-pot rice dishes to enhance the flavor. It is to Haiti what pesto is to Italians and Sofrito/Recaito are to other parts of the Caribbean! Mix ½ cup of seasoning blend with ¼ cup of olive oil, 2 Tablespoons of red wine vinegar, 1 Tablespoon of Worcestershire sauce, and 2 Tablespoons of tomato paste to make a marinade.

It combines Onion, Kosher Salt, Seasoned Pepper, Bell Pepper, Garlic, Ground Red Chiles, Carrot, Celery, Cilantro, Parsley, Chicken Seasoning , Paprika, Habanero Powder, and Clove.

Haitian Griot (Fried Pork Cubes)
Makes 6 to 8 servings

Equipment Mise en Place: Cutting board, Chef's knife, Measuring cups, measuring spoons, liquid measuring cup, three medium mixing bowls, large colander, large saucepan, large slotted spoon, deep fryer, paper towels, large serving platter

Ingredients:
3 pounds of pork shoulder, large cubed
½ cup Epis Seasoning Blend
¼ cup canola oil
¼ cup freshly squeezed lime juice
3 to 4 cups water
4 to 5 cups canola or peanut oil

Accompaniments:
Fried Plantains
Steamed Rice

Method:
1. In medium bowl, combine seasoning blend, canola oil, and lime juice; set aside to re-hydrate. Rinse pork cubes in strainer, then pat dry. Add pork to marinade, mixing well to coat. Cover and refrigerate for 45 minutes or up to 24 hours.
2. To prepare griot, add water and marinated pork to large saucepan. Boil until tender, about 30 to 45 minutes. Meanwhile, heat oil in deep fryer.
3. Remove pork from broth with slotted spoon; set aside in mixing bowl. Do not discard broth.
4. Separate pork into batches, frying until dark brown. Drain on paper towel-lined serving platter. Serve with fried plantains and rice. Use reserved broth as a dipping sauce.

Fried Ripe Plantains
Makes 6 servings

Equipment Mise en Place: Chef’s knife, paring knife, cutting board, large cast iron skillet or deep fryer, medium mixing bowl, small mixing bowl, liquid measuring cup, dry measuring cups, measuring spoons, large slotted spoon, paper towels

Ingredients:
3 cups canola oil
2 Tablespoons water
1½ teaspoons fresh ginger, grated
½ teaspoon sea salt
½ teaspoon cayenne pepper
6 large ripened plantains, peeled & sliced ½-inch thick diagonally

Method:
1. Heat oil in skillet until it is hot, but not smoking.
2. In small mixing bowl, combine water, ginger, salt, and pepper.
3. Dip plantain slices in mixture, then drop into hot oil; deep fry until golden brown, about 3 to 5 minutes. Remove fried slices with slotted spoon. Drain on paper towels.

Glass jars filled with product can weigh up to 8.25 ounces per single jar. Ordering several jars is a welcome option, but will require payment of additional shipping fees.
