The Encyclopedia of Cookery seems to be a cross between a cooking dictionary and an encyclopedia. You may look for recipes using a certain ingredient, cherries, for instance, or from a certain country, or from a certain area of the U.S., or a certain type of food, such as cakes, etc.

There are also entries about a cooking term or technique, such as kneading. If you need to know which type of apple would work best for a pie, the "apple" section will show you a listing of the different varieties and what they are best used for. The introductory articles, on everything from French cooking to candymaking, are very interesting, and the photographs of the dishes are colorful and pleasing to the eye.

This was published over 40 years ago, so some things are dated, and since it does cover A-Z, you will not find every French recipe in the French section, nor every brownie variation in the brownie section, but this is a wonderful reference work!
