It really is magic!

Ok, maybe you won't find bunnies in your top hat or doves in your pockets, but you will find a whole bunch of vitamins and minerals in pretty much anything you want to feed your kids. Or yourself. Let's be real here - yes, it's hard to get kids to eat a rainbow of vegetables, but it's also hard for most of us adults to follow a well-rounded, healthy diet, too. I'm not talking about your Instagram buddies who are eating Kale sundaes with chia seeds on their "cheat days." I'm talking about you and me. Regular folks. Regular people who like good food, but don't always have the time or inclination to make sure each day's meals have every single part of the food pyramid. Specifically, vegetables.

My kids love vegetables, so long as they're cooked broccoli, little cucumbers, or baby carrots dipped in ketchup (is that a veggie double-header?). I want them to love zucchini, and butternut squash, brussels sprouts, Swiss chard, and broccoflower (which is a super cool veggie that looks like purple/orange/green cauliflower), but they don't. Or some of them do, and some of them don't. I have 4 boys (!!), and I don't have the time nor the inclination to worry about who is going to eat what at any given meal.

Anyway, here's my solution. I hope it can be yours, too.

Dehydrated vegetable powder. I dehydrate fresh vegetables, grind them up into powder, mix them all up, and add them to everything. Listen up - EVERY. THING. I toss it in soup, sauces, meatloaf, on chicken, in smoothies, over other vegetables. Everthing. And you know what? They eat it all. All of it. I even eat it, and I don't like zucchini any more than my kids do (unless it's in chocolate bread with chocolate chips).

You can't even taste it in most things. Not even a little bit. I got brave and tried using it as a seasoning on baked chicken and steaks (mixed with some garlic and onion powders), and they loved it all.

I swear by this stuff. I'm not making any outlandish claims here - Mama's Magic Veggie Powder isn't going to make you a runway model or fix what ails ya or teach you to tap dance. What it *will* do, though, is make sure you and yours are getting a ton of vegetables without drama.

Ok, I can't guarantee the no drama stuff, either, because I don't know your life. Look - it's a whole bunch of locally-sourced, fresh vegetables, dehydrated and powdered and ready to do your bidding. That's it. It's 100% vegetables and nothing else. Period.

    My order arrived earlier than expected, and I've used the powder in nearly every meal since. My family eats the occasional salad.carrots.green beans loaded with bacon.and 3/5 eat corn. That's it for veggie consumption. We NEED this product! The first use was in mashed potatoes, and they were definitely GREEN. I made no attempt to hide the product; I did, however, make my most vegetable-loathing child take her first bite with eyes closed. She agreed that was best, because green mashed potatoes look funny- in my house "funny" means "NOPE" 😄 but she LOVED them! It is actually noted on the family calendar "Emily ate VEGETABLES!"

    Tonight we made the most AMAZING chicken&noodles. I roasted chicken after coating it with olive oil and the powder, and used it also in the broth.... SO good.

    I'm ordering by the case from now on!

FAQs

No. In most cases, foods are dehydrated raw. Some vegetables require a blanching process first, to stop enzyme action that can cause a loss of colour, flavour, and nutritional value. Blanching is simply scalding the vegetables in boiling water for a very short time.
Dehydrated foods are sliced thin and dried at a low, constant temperature until completely dried. This process can take anywhere from a few hours to a few days, depending on the water content of the food.
No. Dehydrated fruits and vegetables are shelf stable, and if kept in a cool, dry place, will retain their quality for up to one year.
No, it just means a bit of moisture has gotten into it. Stir it with a spoon or shake the jar (with the lid on!) and it will loosen up again. As long as your package is kept in an air-tight environment, the silica packet enclosed should keep the powder loose.
No. All of my powders consist of 100% fresh fruits and vegetables. That's it. Nothing added except where noted (usually spices). The only extra in the package is a small silica packet to help keep moisture low and the powder from caking.
The dehydration process involves a much gentler evaporation at a much lower heat than cooking, therefore the finished product is as close to fresh as possible. Dehydrated foods retain more of their nutrients than those that are canned or frozen.
A little goes a very long way. 1 (one) tablespoon of powder is equal to roughly 1 (one) cup of its fresh equivalent. If you’re using powder to flavour, start small and keep tasting until you’re happy with the result. If you’re using powder to boost nutrients/vegetable content, use according to the size of your recipe. I usually add about a ¼ teaspoon to a dozen scrambled eggs, and a full teaspoon (or more) to meatloaf. For lasagna and tomato sauces, I add by the tablespoon.
