We have been making kefir for many years and just LOVE this amazing probiotic. It is a powerhouse of beneficial bacteria that helps heal and maintain health. There is MUCH you can find on the internet about the health benefits of this cultured dairy drink. Also, for the lactose intolerance, here is your answer to being able to enjoy dairy once again in your diet. The beneficial yeast and friendly bacteria in the kefir consume most of the lactose (milk sugar) thereby creating a much easier dairy to digest, for those with sensitivity.

You can use soymilk as well as coconut milk for your kefir but they require some additional steps, which we do include in our instructions.

The grains multiply so you can increase your supply of kefir! If well taken care of, you will never have to purchase grains again. Ours are raised in fresh raw organic milk, straight from a local farm family, not a crowded dairy. These animals are well-loved. :-) Goat milk makes a creamier kefir; cow milk makes a thicker kefir. BOTH work GREAT!

*You can use any kind of milk. You do not have to use organic nor do you have to use whole milk.

We drink this sparkling thick beverage straight, as well as in baking and smoothies - YUM! Add a little vanilla and it helps make it less tart.

**Kefir is so easy to make! Just add milk to the glass jar, drop in the grains, and cover with the coffee filter and secure with rubber band. It needs air to breathe but you also want to keep fruit flies out. Sit jar on counter and depending on the taste you want (it gets more sparkling and tart over time), it's ready in 18-24 hours. IN THE COOLER MONTHS IT MAY TAKE LONGER, LIKE 2 DAYS. We wait until the whey starts to separate (you'll see) b/c we like ours strong. Plus it is healthier the longer you brew. It is ok and even beneficial to mix it up while it is brewing. When ready, mix first and then strain in plastic colander or strainer over a bowl or just spoon the grains out to use next time. Store kefir in glass jar in fridge with a tight lid.

**Do not use metal strainer or utensils - this could harm the grains.

There you go! Use grains again immediately or store in some milk in an airtight container in fridge.
