Making your own vinegar is quickly becoming a popular DIY project, and for good reason. Crafting your own vinegar is a great way to use leftover wine, and it has so many uses. It is a wonderful "green" cleaning tool. It is also a tasty addition to your favorite recipes.

Why is it better to make vinegar rather than just buy it? Commercial manufacturers make it too fast and too cheap. Great wine vinegar coaxes out layers of flavor, creating a more seductive dish, according to Paula Wolfert. We absolutely agree!!!

The Clay Coyote vinegar crock is designed to Paula's specifications, holding about 3/4 of a gallon, with the spigot a few inches above the bottom. Ultimately this space is for the residual 'mother' that forms. Of, course, the crock could also be used for other liquids.

Our crocks feature an NSF approved plastic spigot. (We moved from wood to plastic in March 2008 because of problems getting good cork to hold the spigot.) The initial startup will take some 2-1/2 months, but from then on it can be used at any time. You’ll need a starter (we recommend Mark Larrow’s at ) although others are available on the internet or your local beer/wine home-brewing store may carry them. With instructions. Shapes will vary somewhat from the picture as each is individually hand thrown.

This crock is shown in our Yellow Salt glaze. You may also chose your Vinegar Crock to come in any of the other glazes we have shown. All of our pieces are handmade, and they vary in shape and color.

All of our pieces are made with food safe glazes. You can put our pieces in the microwave, dishwasher, and the oven.
