For us, its always been the little things, the attention to details in a craft or recipe that can send the mundane into something truly profound. We constantly seek the most authentic, finest quality items that have deep traditional heritage and culture as well as yielding health, and if possible delicious results. This philosophy culminates into our heirloom strain of Icelandic mead yeast, from our herbalists teachers from that Thulean island (Iceland). This is a truly ancient strain, pass along from generation to generation, infused with the purpose and intent, the history and the lore of countless brewers, herbalists and Vikings. This is a pack that contains a natural yeast nutrient as well, ensuring a robust ferment.

As with most things, you can make brewing mead as complicated or simple as you want to. We prefer the traditional methods, with the finest honey we can acquire (usually our own). You need some basic equipment,but most with some research can be improvised. This is the most ancient fermented drink the world, and as such can be accomplished with really primitive technology, but some modern materals can makes things safer, more sterile and in some cases taste better as a result.


Nordic Heirloom Mead Yeast
This is a strain that has been used to brew meads for herbalism, ritual and flavor for hundreds of years. From a small family of homebrewers who wildcraft many of our herbs in Iceland coems this ritualized mead yeast. Great for sweet meads, herbal meads, has a slightly fruity taste to it. This is so vigorous it does not need an extra nutrient.

We usually write very involved product descriptions, because for us, it is another medium of for expressing our weltanschauung, or worldview. This is essentially of presecing the best of the past, and making it a vital, living tradition for navigating the present while building a new world for the next generation. We lament the loss of connections with tradition, nature, the past, the ancestral ways. We seek to find proactive ways for people to re-experience and awake to the delight of living, the quest, the heroic possibilities.
The motivation to create, to make art, delicious food, plant gardens, have beautiful conversations, learn skills, get healthy, take up artisan crafts, bake, or brew mead and ales. This is very special and limited quantity heirloom yeast from the heart of the lands of Old Traditions. This is from the wild yeasts in the air, the same yeasts the fermented viking ales and sourdoughs, but selected over generations for one that ferments honey into the most delicious and sacred mead.
We will be bringing for many more exciting items, mead horns, herbs, seeds for herbs associated with mead, dried berries, paraphernalia, etc..

You need a glass bottle (5L) or small carboy airlock and bung, or can make with cling film or balloons as one can find improvised in various online resources). You will need a syphon tube but can improvise that as well or pour carefully. Funnels etc. Many people use the tablets used to sterilize baby bottles for sterlizing the materials (it is not necessary really as long as clean). 3 lbs of honey, 5 grams of our Yeast/nutrient blend. 1 chopped apple, 1 lemon and some raisins or other dried fruit, we prefer elderberries.

See our mead zine with herbs recipes, but here is a simple one to get started. Add honey to the 1 Liter of water, and gently warm to dissolve (we suggest double boiler to keep the temperature low. We only use raw, organic honey). It is crucial to not overheat the honey, it effects the taste, health and fermenting. When cooled, pour into the chosen fermenting vessel and top with water. Add in the chopped apple, the zest of the lemon (if desired), and dried fruit/raisins. Then add the mead yeast. Cover with airlock or cling film, and place in a warm spot. It takes about two months to "clear", then it can be siphoned and placed into clean bottles and corked. You can "rack" by taking into a new glass vessel and let it clear a few more weeks. The best is said to be at least seven years so start now! A year is fine but some people drink young meads as well. Taste it and decide when it is ready to drink for you. We drink some young and put some away with each batch, clearly marked with dates and ingredients. Keeping a notebook of brews and experiments is a great way to start a tradition. Start a mead hall with your family and friends, make a relationship with a local beekeeper. Keep and pass this strain of yeast to your kin and friends. The health benefits of this are many, but I honestly believe that this is one of the main reasons why I have not gotten sick this winter. Many friends and family came down with the flu, but I haven’t. I know that this stuff works. A fantastic product!
