Mexico - Chiapas - Mocabe - Organic - Unroasted
The organic Mexico MOCABE is grown on farms at altitudes around 1,350 meters, and are then hand sorted to remove any defective beans and foreign material. MOCABE started its activities as a small farmer work group in 1999, and was founded in August of 2000 as a Social Solidarity Society. Their objective is to create new opportunities for small coffee farmers by gaining better access to credit for production improvement and trading, better coffee prices, more sustainable farming practices and improve health and livelihood for producer families by reducing environment pollution levels.
MOVIMIENTO CAMPESINO DE BELISARIO SPR DE R.L made up of 270 small coffee farmers in the Motozintla de Mendoza municipality of the Chiapas region in Mexico. It is bordered by Sierra del Sur de Chiapas and Centro America Volcanos (Cuchumatanes), and the municipality is formed by 344 locations, most of them are coffee farms with a territorial extension of 782.50 square kilometers. Only Montozintla de Mendoza is considered an urban community, making it the head municipality.
They are recognized by the National Organic Program (NOP) by the services of Organic Crops Improvement International (OCIA Intl.) In 2010, MOCABE built its facilities which consist of a coffee warehouse and offices in the nearby Belisario Dominguez community. It bought two coffee transportation trucks with a capacity for transport 2.5 Metric Tons each.
Exportadora de Café California plays a central part in the Mexican coffee export business with a market share of around 15 %. At the same time the company is a main supplier to the local industry.

Our coffee origins are directly purchased from the specialty coffee trading company. We only buy current crop specialty grade coffee. Every coffee origin we purchase, that is not already in Grainpro bags, are immediately put in Grainpro bags then kept in dark climate-controlled conditions to keep the green coffee as fresh as when purchased.

How to store your Coffee
Green Coffee can last 1 to 2 years, if stored properly. The food grade plastic bags we ship in, are not optimal for long term storage in our opinion. You'll hear varying opinions on this, but Vacuum sealed plastics should only be used as storage for 2 months max. Green Coffee needs to Breathe! Our recommendations would be to use GrainPro Grainbags because for longterm storage these multi-layer plastic bags create a gas barrier enabling coffee to build up a modified atmosphere to maintain freshness for years. Be sure to store your green coffee in a dark (green coffee is susceptible to light) well-ventilated area at room temperature. Avoid extreme temperature and humidity variations.

Coffee Packaging
Roasted Coffee is packed in valved, food grade, Biotrē™ coffee bags to ensure freshness and superior quality. We use the Biotrē™ coffee bags because they are 60% (by weight) biodegradable, made from wood pulp, which is compostable. The other 40% of the bag is a polyethylene liner that has an additive, allowing the liner to break down within 5-10 years. (Biotrē™ 1.0: 60% compostable/60% renewable, not including the valve.) We do this because a standard plastic coffee bag can take up to one thousand years to decompose. So just remove the valve from the bag and compost.
