End grain rock (sugar) maple chopping blocks are the traditional choice for chefs because of their hardness and tight grain.

Only end grain is relatively non-scarring, self-healing and kindest on your good cutlery; in short, one of the best investments for any kitchen.

I use only the best fda-approved titebond iii waterproof wood glue in all my blocks and boards.

Of course any size is possible, although each block is unique and will vary in appearance slightly (you may specify as many details as you wish, and I am happy to provide photos throughout the process as desired). Please don't hesitate to start a conversation and specify if you would like a juice groove, etc.!***

End grain blocks do require very specific care, particularly regular oiling. Your block will need to be oiled daily during the first two weeks after arrival. Basic food grade mineral oil is available at any pharmacy, but something with more blocking agents is recommended.

Do *NOT* ever use olive or organic oils on a genuine (end grain) chopping or butcher block, as they will soak in deeply and always eventually break down, rendering the block rancid and unusable. While basic care instructions are included, please see my "shop policies" for much further information.

• Keep clean, cool and dry and most importantly, well-oiled

• Wipe, scrape or hand wash with warm water & soap (do not submerge, let soak in moisture or put in dishwasher)

• If absolutely necessary, a stronger cleaning agent can be used to get rid of unwanted residues, odors, bacteria or stains, such as pure white vinegar, lemon, salt, or something stronger (see link above).

• Hand dry with clean cloth *immediately* after washing (do not let drip dry in dish rack)

• Get in the habit of quickly re-oiling both sides and all edges thoroughly and evenly after every washing and drying. This is part of the pleasure of owning an heirloom block!
