Gourmet Beef Jerky - Curry Biltong (great low-sodium option)

My beef jerky comes from the leanest and most tender cuts. Once sliced, I usually marinate for 24 hours.

Biltong originated in South Africa. The beef is typically dried in the sun. My recipe uses variations on traditional Biltong spices and vinegar but is dried in a dehydrator.

If you like vinegar or are looking for a low sodium option to traditional jerky recipes, this is the recipe for you. There is no soy sauce and only a two teaspoons of salt used per pound of meat. Please see the "materials" below for all ingredients in the marinade.

My jerky will last (if you can) at least 90 days. If you are in warmer climates, refrigeration is recommended to ensure freshness if you are not going to eat right away.

Jerky is perfect for any outdoor activity (hikes, biking, skiing, kayaking), long drives or just anytime snacking. You can even share our jerky with your favorite pooch. My dogs love it!
