Hawayej Soup Seasoning Blend is commonly used in Yemenite cuisine, yielding rich, flavorful soups and stews. My signature blend combines Black Pepper, Cumin, Turmeric, Coriander, Clove, Toasted Onion Powder, Caraway, and REAL Saffron.

Marak Temani (Yemenite Soup) is traditionally served as the entree of the Shabbat meal on Friday evening. There are three popular versions: vegetable, chicken, or beef. Although early Judeo-Yemenites typically used chicken in their soup because meat was expensive and difficult to come by, the beef version has steadily gained popularity throughout Israel.

Marak Temani (Yemenite Soup)
Makes about 8 servings

Equipment Mise en Place: Cutting board, Chef's knife, paring knife, measuring spoons, measuring cups, liquid measuring cup, wooden spoon, large mixing bowl, Dutch oven, serving bowls

Ingredients:
3 pounds beef stew meat, cubed
3 Tablespoons Hawaij Soup Seasoning Blend
2 Tablespoons olive oil
2 large white onions, thinly sliced
4 cloves fresh garlic, halved
1 marrow bone
4 large Roma tomatoes, peeled, quartered & seeded
1 bunch fresh cilantro, tied into a "bouquet garni"
2½ quarts beef stock
Sea salt & black pepper, to taste
4 large red potatoes, peeled & large cubed
3 medium carrots, peeled & medium diced
3 medium zucchini, medium diced
2 red bell peppers, medium diced

Garnish:
½ bunch fresh cilantro, finely chopped

Method:
1. Place meat in Dutch oven. Sprinkle meat with seasoning blend, tossing with wooden spoon until coated.
2. Over medium heat, cook stew meat, stirring often, until evenly browned on all sides. Turn off heat, transfer meat to large bowl, and set aside.
3. Coat the bottom of pan with olive oil; add chopped onion and garlic.
4. Sauté vegetables over medium heat. Stir constantly, scraping bottom of pan for 5 to 6 minutes.
5. Add meat, marrow bone, tomatoes, and cilantro bunch to sauteed vegetables. Cover with 2 to 3 quarts of stock until ingredients are nearly submerged.
6. Bring soup to a boil, then reduce heat to medium. Simmer for 10 to 15 minutes. Season with salt and pepper. Reduce heat to low and cover pot.
Simmer soup for 2½ hours.
7. Add potatoes, carrots, zucchini, and bell pepper; simmer for 30 to 45 minutes until soup thickens and meat is tender.
8. Before serving, remove tomatoes, marrow bone and cilantro bunch. Serve in individual bowls, garnished with chopped cilantro.

International (and domestic) customers please note that estimated shipping rates are based on kraft box packaging weighing less than 8 ounces. Glass jars filled with product can weigh up to 8.25 ounces per single jar. Ordering several jars is a welcome option, but will require payment of additional shipping fees. The same applies when ordering products packaged in 8 ounce zipper pouches.
