Hot pepper jelly is a delicious, intriguing wonderful spread. For this pepper jelly, the habaneros and apricots create a very pretty jelly wonderful as an appetizer, glaze or in stir fry. The heat of the habanero is compensated by the sweet. My favorite way to eat is on a cracker with some cream cheese. The fat in the cheese cuts the heat further down allowing one to taste the pepper. The apricots then add a complimentary fruit taste. It is always fun to take as a party dish (the jelly served over softened cream cheese)and watch it get devoured as more people out of curiosity first try it and then devour it. I consider this one mild hot and it is one of my favorites.
