Kefir is a delicious, slightly carbonated, fermented milk drink with a flavour similar to that of yogurt. It is renowned for its wide ranging probiotics which are similar to those found in the human digestive system. Kefir has gained in popularity lately, due to interest in the health benefits of probiotics from cultures and whole foods. Some of the benefits include:
• a natural source of nutrients such as protein, Calcium, Phosphorus, Vitamin B12, Riboflavin (B2), Magnesium and vitamin D
• it is a natural probiotic, more powerful than yogurt
• it has antibacterial properties
• it can improve bone health
• probiotic and helps with digestive problems

Milk Kefir originated roughly 2,000 years ago in the Caucasian Mountains between Europe and Russia, which makes kefir one of the oldest milk ferments in existence.

Kefir is extremely easy to make at home in your own kitchen. You simply add the grains to milk and ferment at room temperature for 12–24 hours depending on how warm the room is and how you like the flavour. It has many health benefits, and is also usually tolerated well by those who are lactose intolerant.

Authentic kefir can only be made with real live kefir grains, not from a packet, powder or from incubating shop-bought kefir which is most likely pasteurised and therefore not at all alive!

I also offer tips on how best to keep your kefir if you are going away for some time and what to do when you have too much kefir (it will grow, believe me!)
